Ingredients

  • 1 Lb Ground Turkey or Leftover Smoked Turkey
  • 1 Tbsp Olive Oil
  • 1 Cup Bell Peppers Diced
  • 1 Cup Zucchini Diced
  • 1/2 Cup Onion Diced
  • 2 Cloves Garlic Minced
  • 1/2 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 2 Cups Cooked Rice, Quinoa, or Cauliflower Rice
  • 1 Tbsp Soy Sauce or Tamari

Instructions

  • Put olive oil into the pan over medium heat.
  • Add onion and garlic and cook till soft, about 2–3 minutes.
  • If using ground turkey, cook until no pink remains. If using leftover smoked turkey, swirl in shredded pieces and heat through.
  • Add bell peppers and zucchini.
  • Season with salt, pepper, and soy sauce if desired.
