Ingredients

For the Muffins

  • 3 Cups All-purpose Flour
  • 1 Cup Granulated Sugar
  • 2 Tbsp Baking Powder
  • 1 Package Instant Pudding Mix
  • 2 Eggs Beaten
  • 1 1/4 Cups Milk
  • 3/4 Cup Vegetable Oil
  • 1/2 Tsp Extract Vanilla, Lemon, or Strawberry
  • 1-2 Cups Mix-ins Chocolate Chips, Blueberries, Nuts, or Raisins

For the Pudding Filling

  • 1/2 Cup Vegetable Shortening
  • 1/2 Cup Butter
  • 2 1/2 Cups Powdered Sugar
  • 1-2 Tbsp Milk
  • 1 Tsp Vanilla Extract Optional

Instructions

  • Preheat the oven to 375°F. Line or grease a muffin pan.
  • In a large bowl, stir flour, sugar, baking powder, and pudding mix.
  • In another bowl, whisk eggs, milk, oil, and extract.
  • Combine wet and dry ingredients gently—don't overmix.
  • Fold in mix-ins (chocolate chips, fruit, or nuts).
  • Fill muffin cups halfway with batter. Add a spoonful of pudding filling in the center.
  • Cover with more batter until almost full.
  • Bake for 18–22 minutes. Test with a toothpick.
  • Let cool before serving.
